The French Paradox has been attributed to
the high consumption of red wine and grapes—foods that
contain ample quantities of health-promoting compounds called
polyohenols. Polyphenolic procyanidin occur as single units
(monomers) an oligomers (such as dimers and trimers).
They
are responsible for most of the significant health effects of
grapes and grape seed. These polyphenols have a long history
of medicinal use, and modern research has pointed out the enormous
antioxidant potential of grape seed extract in particular. The
antioxidant activities were found to be much stronger than vitamin
C or vitamin E in aqueous systems. Other benefits attributed
to grape seed include prevention of atherosclerosis, reduction
of cholesterol, and delayed onset of cataracts. New research
examining the chemoprotective effects if grape seed is also
